I spent last summer in Greece and it was amazing! So, there was this night that my company and I were enjoying our dinner in a Greek ‘taverna‘. Its daily special was “Lentil soup“. I liked it so much that I asked the taverna’s owner about the ingredients and the recipe so that I could make it on my own or share it and he willingly wrote it down for me.
What we need:
* 300 gr lentils
* 1 onion
* 2 cloves of garlic
* 2 bay leaves
* Salt-pepper
* Olive oil
* 2 grated tomatoes
* 1 tablespoon tomato paste
How we do it:
1. Boil the lentils in water for 10 minutes. When ten minutes are over, throw away the water.
2. Sauté the onion in oil.
3. Add the tomato paste, tomatoes and then water to cover them and add lentils.
4. Add salt and pepper, bay leaves, chopped garlic and cook for 15-20 minutes until lentils become a soup.
